Magical Microwave Eggplant


So, as usual it was a weekday might and I needed a quick dinner. What to do? I had a raw eggplant sitting around and decided that steaming it’d be nice since I’m fond of veggies, particularly when steamed. And I had the idea to steam it in the microwave.

And it worked! Wonderfully bringing out the flavor and texture of the vegetable and making it an even more endlessly versatile ingredient.

A simple way to cook an eggplant in a microwave:

Cut the eggplant into cubes
Place cubes in a ceramic bowl
Microwave in bowl for 8 minutes, pausing at the 4 minute mark to mix up the partially cooked eggplant

If necessary or desired, finish eggplant in a skillet or saucepan
